Lion's Mane Mushroom and Pancetta Salmon

Begin by slicing the lion's mane mushroom into strips and dicing the shallot. After that, heat a skillet on medium-high heat. Add butter, diced shallot, sliced lion's mane, minced garlic, and pancetta to the skillet. Sauté until crisp (about 5-7 minutes). Once crisp, remove from the skillet. Prepare the salmon by patting it dry with a paper towel and sprinkling with salt and pepper. Add avocado oil to the same skillet and place the salmon skin-side down. Cook for about 4 minutes. Using a spatula, flip the salmon over and cook until it feels firm, about another 3 minutes. Plate the salmon and add the lion's mane and pancetta mixture on top of it. Enjoy with your favorite veggies or side!
